- 4 Large Egg
- 2 Tbsp Parsley - Chopped
- 1/4 Cup Feta Cheese - Crumbled
- 1-2 Slice Sour Dough Bread

- Heat the olive oil in a large cast-iron skillet over medium heat. Add the onion and bell pepper, cooking for 6–8 minutes until softened.
- Stir in the garlic, smoked paprika, cumin, chili flakes, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Add the tomato paste, crushed tomatoes, diced tomatoes, and sugar if using. Stir well and bring to a gentle simmer.
- Reduce the heat to medium-low and cook for 15–20 minutes, stirring occasionally, until the sauce has thickened and the flavors have developed.
- Use the back of a spoon to make four small wells in the sauce. Crack one egg into each well.
- Cover the skillet and cook for 5–8 minutes, or until the egg whites are set while the yolks remain slightly runny (or cook longer if you prefer)
