- 1 Tsp Baking Powder

- 1 Tsp Cinnamon
- 1 Tsp Vanilla
- 1/4 Tsp Salt

- Preheat the oven to 350°F (175°C) and lightly grease an 8-inch pie plate or baking dish.
- In a large bowl, whisk together the Greek yogurt, pumpkin purée, eggs, honey, and vanilla until smooth.
- Add the oat flour, baking powder, pumpkin pie spice, cinnamon, and salt. Stir until well combined.
- Pour the batter into the prepared pie plate and smooth the top.
- Bake for 35–45 minutes, or until the center is set and a toothpick inserted near the center comes out mostly clean.
- Let cool for at least 20 minutes before slicing. For the best pumpkin pie texture, refrigerate for 2 hours before serving.
- Serve with a dollop of Greek yogurt and a sprinkle of cinnamon if desired
