- 1 1/4 Cups Vegetable Oil
- 2 Cups White Sugar
- 2 Tsp Vanilla
- 2 Cups Flour
- 2 Tsp Baking Powder
- 2 Tsp Baking Soda
- 1/2 Tsp Salt

- 3 Cups Carrot
- 1 Cup Pecan
- 1 Cup Raisins
- 4 - Egg

- Preheat oven to 350 F (175 C).
- Grease and flour a 9x13 inch pan.
- In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla.
- Mix in flour, baking soda, baking powder, salt and cinnamon.
- Stir in grated carrots.
- Pour into prepared pan.
- Bake in the preheated oven for 40 - 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in pan for 10 minutes then turn out onto a wire rack and cool completely.
Variations: Fold in chopped pecans and or raisins.
