- 3 Cups Zucchini
- 3 - Egg
- 1 1/2 Cups White Sugar
- 1 Cup Vegetable Oil
- 3 1/2 Cups Flour
- 1 Tsp Baking Powder
- 1 Cup Pecan (or Almond)
- 1 Tsp Baking Soda
- 1 Tsp Salt
- 2 Tsp Vanilla
- 1 Tsp Cinnamon
- 1 Cup Coconut

- Beat eggs with sugar and oil.
- Add the shredded and drained zucchini (cream mixture).
- Sift together 3 cups flour with baking powder, baking soda, salt and cinnamon.
- Add to cream mixture.
- Add vanilla and mix thoroughly.
- Add remaining flour to coconut and nuts - Stir to coat.
- Add to mixture and mix thoroughly.
- Pour into 2 greased loaf pans.
- Bake at 325F for 1 hour or until done.
- Cool 10 min. in pan and remove.
