- Preheat the grill or oven to 400°F (200°C).
- Toss the potatoes with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper.
- Add the chicken, peppers, onion, corn, and BBQ sauce, then mix until everything is evenly coated.
- Divide the mixture evenly among four large sheets of heavy-duty aluminum foil.
- Fold and seal each foil packet tightly, leaving a little room inside for steam to circulate.
- Cook for 30–35 minutes on the grill (or 35–40 minutes in the oven), flipping the packets halfway through cooking.
- Carefully open the packets, checking that the chicken has reached 165°F (74°C) and the potatoes are fork-tender.
- Sprinkle with cheddar cheese if using, reseal for 2–3 minutes until melted, then garnish with parsley or green onions and serve.
