Thinly slice onion crosswise. Remove large stems from spinach leaves. Tear leaves into bite size pieces. Place in large salad bowl, add fruit (you can change to any desired fruit), onion and sunflower seeds. Toss gently to combine. Cover and refrigerate until ready to serve.

- 11 Oz Mandarin Oranges (or Raspberry)
- 1/2 Small Red Onion
- 2 Tbsp Sunflower Seed

Place all ingredients, except oil and poppy seeds in a food processor. Process 15 seconds. With motor running, add oil through feed tube in a slow steady stream. Add poppy seeds. Turn off and on two or three times. Pour over salad and mix just before serving.
