- Fold in the chicken, celery, red onion, grapes, pecans, and parsley until everything is evenly coated.
- Refrigerate for at least 30 minutes to let the flavors blend.
- Slice the croissants in half.
- Add a layer of lettuce to each croissant, then spoon on a generous amount of chicken salad.
- Top with tomato slices if desired and serve immediately.
