- Prepare pre-frozen tart shells by baking according to package directions.
- Whisk the pudding mix with the cold milk until thick. Fold in the whipping topping if using.
- Spoon the vanilla filling into each cooled tart shell.
- Arrange fresh fruit on top in colorful patterns.
- Warm the apricot jam with the water and brush lightly over the fruit for a glossy bakery-style finish.
- Refrigerate for at least 1 hour before serving.
