- 3/4 Cup Cracker Crumbs
- 1 Tsp Salt
- 1 Dash Black Pepper
- 2 1/2 - 3 Lb Chicken

- About 1 hour before serving, preheat oven to 400 F.
- In 9" x 13" baking dish, melt butter in oven.
- On waxed paper, mix cracker crumbs, salt & pepper.
- Remove dish from oven.
- Roll chicken in butter then coat with crumb mixture.
- Put chicken back into buttery pan.
- Bake 40 - 50 minutes until chicken is fork tender.
- Makes 4 servings.
