- Combine strawberries with honey and lemon juice in a bowl.
- Let set for 10 minutes to release the juice from berries.
- Make the Protein filling.
- Add Greek yogurt, cottage cheese, protein powder, pudding mix, honey (if using) and vanilla to a blender or mix with hand blender.
- Blend until smooth and creamy.
- Assemble the cups.
- Divide half the granola among 4 dessert cups. (bottom layer)
- Spoon a layer of the protein filling over the granola.
- Add a layer of strawberries.
- Repeat with remaining protein filling and strawberries.
- Finish.
- Top with additional granola, and mint.
