Ingredients: 3 Cup Old Fashioned Oats; 1 Cup Mixed Nuts; 1/4 Cup Pumpkin Seed; 2 Tbsp Chia Seeds; 1/2 Cup Unsweetened Coconut Flakes; 1/2 Tsp Cinnamon; 1/4 Tsp Salt; 1/3 Cup Maple syrup; 1/4 Cup Coconut oil; 1 Tsp Vanilla

Directions

Preheat oven to 325 F
Line a baking sheet or 9x13 inch pan with parchment paper.
In a large bowl, combine oats, nuts, pumpkin seeds, chia seeds, coconut flakes, cinnamon and salt.
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread onto the prepared baking sheet and gently press down for larger clusters.
Bake for 25-30 minutes, stirring once halfway through, until golden brown and fragrant.
Cool completely before breaking into crunchy clusters.
Store in airtight container for up to 2 weeks.
