- 1 1/2 Lb Haddock
- 15 Oz Tomato
- 1 Medium Onion Cooking
- 1 Clove Garlic
- 1 Small Green Pepper
- 1 Tsp White Sugar
- 2 Oz Butter
- 2 Tbsp Bread Crumbs
- 1 Tbsp Parmesan Cheese

- Cut fish into 2 inch pieces, and arrange in a well buttered dish.
- Melt one oz butter in a saucepan.
- Peel and chop the onion, crush the garlic finely.
- Add to the hot butter and fry until onion is soft.
- Finely chop and add the tomatoes, green pepper.
- Salt and pepper to taste, sugar and herbs.
- Cover pan with lid and simmer gently for fifteen minutes.
- Pour the vegetable mixture over fish.
- Melt one oz butter in a saucepan, and draw off heat.
- Add the breadcrumbs and, using a fork, toss them in the butter to coat.
- Add grated cheese and sprinkle this mixture over the vegetables.
- Place in center of a hot oven 400 F and bake for half an hour, or until fish is tender and topping crisp.
- Can be made and reheated.
