- 2 1/2 Lb Red Potato - Halved
- 3 Large Hard Boiled Egg - Chopped
- 3/4 Cup Mayonnaise
- 1/4 Cup Sour Cream
- 1 Tbsp Dijon Mustard
- 1 Tbsp Apple Cider Vinegar
- 1 Tsp Fine Granulated Sugar
- 1 Tsp Garlic Powder
- 1/2 Tsp Onion Powder
- 1/4 Tsp Salt
- 1/4 Tsp Black Pepper
- 2 Stalks Celery - Diced
- 1/4 Cup Red Onion - Diced
- 2 Tbsp Dill Weed - Chopped
- 2 Tbsp Parsley - Chopped
- 2 Green Onions - Sliced
- 1 Tsp Paprika Powder

- Wash the red potatoes and leave the skin on. Place them in a large pot of salted water.
- Bring to a boil and cook for 12-15 minutes, or until potatoes are fork-tender. Drain and let cool for about 10 minutes.
- In a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, garlic powder, onion powder, salt and pepper until smooth.
- Add the warm potatoes, chopped eggs, celery, red onion, dill, parsley, and green onions to the bowl.
- Gently fold everything together until the potatoes are evenly coated with the dressing.
- Cover and refrigerate for at least 1 hour to allow the flavors to develop.
- Before serving, sprinkle lightly with paprika and a little extra dill or parsley.
